A meeting made of wine
Studies in wine and oenology brought Stéphanie and Frédéric together in Montpellier in 1999.
The training that followed, alongside winegrowers committed to biodynamic farming such as Didier Barral and Olivier Jullien, led them to join their passions in order to go further.
Driven by conviction and experimentation, they quickly turned to organic and then biodynamic farming.
Farming that respects the land and winemaking without intervention or oenological products allow them to produce lively, subtle wines: expressive wines described as living, natural.
The estate
Rather than joining an already recognised AOC, whether Pic St Loup or neighbouring Aniane, he preferred this location on the Terrasses du Larzac, because it has a meteorological singularity: located north of curve F on the bioclimate diagram (which represents the cool zone), this terroir has only between 1,350 and 1,450 hours above 10°C on the Winkler scale, whereas most well-known sites in Languedoc have longer periods of sunshine, with recorded temperatures ranging from temperate to mild.
The original idea: to vinify each plot in its own dedicated vat, in order to bring out its terroir, its immediate surroundings and this climate, rather than working solely with the grape variety.
This gives their wines an aromatic framework shaped by the plot rather than by the grape variety.
