Description
TERROIR
Clay-limestone soil, not very fertile, south and south-west facing, backed by a rocky hill
GRAPE VARIETIES
80% Syrah, 20% Grenache
GROWING METHOD
Three plots of old Syrah vines on the estate’s best terroirs are harvested by hand, the date decided by tasting the berries. Yields from these vines are very low; the grapes are carried in small crates to the winery, where they are handled very carefully by hand. Maceration takes place in small tanks where the cap is punched down daily
AGEING POTENTIAL
10 years
AGEING
Aged in oak barrels for 14 months. No filtration at bottling. A natural deposit may be present
TASTING ADVICE
This fine wine goes well with game, meat in sauce or grilled, and cheeses. Best enjoyed between 16° and 18°C
TASTING
Deep, intense red colour. A deep nose with aromas of black fruit, fresh red berries, garrigue and mocha. A lively, velvety attack. On the palate, complexity and gourmandise: blueberry-like black fruit, juniper, crushed pepper, liquorice and Espelette pepper. The juicy substance is supported by fine-grained tannin that adds to its elegance
