Description
The “Morogues” white cuvée is made from 100% Sauvignon Blanc from vines averaging 25 years old. The plot covers 12 hectares, planted at 7,500 vines per hectare on a Kimmeridgian marl terroir, facing from east to west via the south.
Winemaking: Direct pressing as soon as the grapes arrive at the winery, settling and fermentation in stainless steel vats
Ageing: on the lees, mostly in stainless steel vats, with a few wooden vats and barrels
Tasting notes: “Pure expression of a terroir”… A blend of 7 plots on the highest slopes of the appellation. This geographical setting (a cold but very sunny climate) and soil type (Kimmeridgian marl) give this wine a discreet, pure nose that opens onto aromas of white flowers and citrus. The palate is racy and crystalline, all about length, with citrus notes at first, then saline and mineral notes on the finish. Nothing exuberant here, just clarity and precision.
Food and wine pairings:Fish and shellfish dishes, smoked salmon, fish terrine and other cold starters, asparagus risotto, pan-fried scallops, fresh cheeses, Asian dishes or chicken curry…
