Description
Colour: Very pale, luminous yellow
Nose: Refined, vertical: struck flint, smoke, incense and camphor, Reinette and Granny Smith apples, lime or lemon, plenty of flowers and chlorophyll around jasmine, lily of the valley and violet, verbena, eucalyptus and a touch of chervil
Palate: Supple, juicy texture; the creamy density of very ripe white fruit – pear, apple, apricot – is balanced by a tauter, tangy thread of lemon and grapefruit juice. Finish with peppery, saline accents
Food and wine pairings: Sea bass tartare with chervil or a platter of oysters. After 3 years in the cellar, go for roast cod loin with tartare sauce and steamed potatoes.
