Description
“We had always dreamed of making a white wine. It was a real challenge: we had to plant vines and equip ourselves in the cellar to fight oxygen. We were close to conquering space and, through patience, we took our Premiers pas sur la lune (first steps on the moon).”
Soil: Clay-limestone
Winemaking: Mechanical night harvest followed by cold skin maceration, then aged in tank for 4 months with stirring of the fine lees for 30 days.
Tasting: The colour is brilliant, a lovely pale yellow. The nose shows remarkable aromatic intensity, largely dominated by exotic fruit (mango, passion fruit), joined by delicate floral notes. The attack on the palate is lively, all freshness and elegance, with excellent aromatic length.
Food & wine pairings: mussels ravigote. Sole meunière.
