Description
The red cuvée “Les Bornés” is made from 100% Pinot Noir from vines averaging 35 years old. The plot covers 4 hectares, planted at 6,500 vines per hectare on a terroir of Kimmeridgian marl.
Winemaking: Maceration of 2 to 4 weeks in stainless steel and wooden vats. Natural fermentation (so with indigenous yeasts) and direct blending of free-run and press juice
Ageing: in wooden vats
Tasting notes: This cuvée is a blend of several plots of Kimmeridgian marl in Menetou-Salon. Les Bornés is an indulgent, pleasure-giving cuvée in which fruit combines with lovely substance. A generous wine to share within three years, with white meats or charcuterie.
Food pairings: As an aperitif, with tapas, a charcuterie and cheese board, chicken or turkey fillet, pizza or pasta, quiche lorraine or savoury aperitif biscuits!
