Description
This Pinot Noir comes from a 1-hectare vineyard with vines averaging 35 years of age. Yields are deliberately low, at 35 hl/ha, to ensure optimal aromatic concentration and exceptional grape quality. The grapes are harvested by hand, selecting the ripest bunches, and then vinified using traditional methods that respect the terroir and the expression of the variety.
Winemaking begins with around 15 days in vat, with 35% whole bunches, bringing aromatic complexity and a delicate tannic structure. This technique draws out the finesse and richness of the Pinot Noir while maintaining lovely freshness. The wine is then aged in amphora-shaped oak barrels for 12 months, a unique process that allows a gentle maturation, preserving the purity of the aromas and adding an extra dimension to the wine’s texture.
Visually, this Pinot Noir shows a purplish red colour with garnet glints, a sign of its development and richness. On the nose, intense aromas of candied fruit, black cherry and liquorice emerge, bringing lovely complexity. On the palate, the wine reveals controlled power, impressive length and remarkable finesse. The tannins are silky and well integrated, offering a harmonious structure that will develop well over time.
Served at 14°C, this Pinot Noir pairs perfectly with dishes such as grilled meats, game or aged cheeses. With production limited to around 5,000 bottles, this rare and refined wine is a real favourite for lovers of Pinot Noir with character. A bottle to enjoy now or to lay down in the cellar to appreciate how it develops over the years.
