Description

The Crozes-Hermitage AOP – Le Pavillon red from Domaine du Pavillon is an authentic cuvée reflecting the full character of the Crozes-Hermitage appellation’s terroir. Made from Syrah grown on the clay-granite soils of the Rhône Valley, this red wine embodies the richness and typicity of this northern terroir.

The estate’s vines enjoy an exceptional natural setting. The soils of granite and light clays, combined with a temperate climate, allow optimal ripening of the grapes while preserving the freshness and aromatic expression of the grape variety. Sustainable management of the plots and meticulous work in the vineyard keep yields moderate, favouring concentrated aromas and high-quality grapes.

The grapes are harvested by hand to ensure a rigorous selection of fully ripe berries. In the cellar, the winemaking follows traditional techniques. The grapes are destemmed and undergo a cold pre-fermentation maceration, followed by fermentation in temperature-controlled stainless-steel vats. This method allows a gentle extraction of aromas and tannins, keeping all the finesse of the fruit while building the wine’s complexity. Malolactic fermentation takes place in vat, before ageing in vat and barrel for about 12 months. This process allows the wine to refine and gain roundness while preserving its freshness.

On tasting, the Crozes-Hermitage – Le Pavillon shows an intense ruby colour with crimson glints. The very expressive nose opens on aromas of black fruit (blackcurrant, blackberry), with spicy notes of black pepper, liquorice and violet, typical of Syrah on this terroir. On the palate, the attack is clean and velvety, with an elegant tannic structure, well balanced by mineral freshness and fine length on the finish, with spicy and oaky nuances that add depth.

Combining power and finesse, this wine pairs perfectly with grilled meats, game, slow-cooked dishes or mature cheeses. At its peak after a few years in the cellar, it can also be enjoyed now, after a short decanting to release its full aromatic complexity.
