The Côte-Rôtie AOP – Cuvée Cœur de Rose from Domaine de Rosiers is the estate’s most accomplished cuvée, made only in great vintages from a rigorous selection of 10 barrels from the whole cellar after 20 months of ageing. From the finest plots of the Côte Brune, on steep hillsides with schist and iron-rich soils, this confidential cuvée (around 3,000 bottles a year) is 100% Syrah (sometimes with a light co-fermentation of Viognier, depending on the vintage), from vines 35 to 50 years old farmed sustainably. The harvest is by hand, with meticulous sorting plot by plot. Vinification is traditional: partial destemming, fermentation in temperature-controlled stainless steel tanks for around three weeks with punching down and pumping over for gentle extraction, then malolactic fermentation followed by ageing in French oak barrels (25 to 30% new) for 20 months. On tasting, the colour is deep, ruby with garnet tints. The nose is intense, revealing great aromatic complexity, combining ripe black fruit (blackberry, blackcurrant, plum), spices (black pepper, liquorice), violet, fine leather and a perfectly integrated touch of oak. On the palate, the attack is broad, structured and elegant, with silky tannins and a long, racy, mineral finish. A wine for long ageing (15 to 20 years), this exceptional cuvée pairs perfectly with red meat, game, truffle dishes or hard matured cheeses. Serve between 16 and 17 °C.
