Description
Cévennes IGP – Tour de Gâtigne – Viognier white is an exceptional wine that reflects the richness and originality of the terroirs of the Cévennes valley. Made from the Viognier grape, renowned for its intense aromas and elegance, this wine benefits from a clay-limestone terroir and a Mediterranean climate tempered by mountain influences. These ideal conditions allow slow, optimal ripening of the grapes, ensuring a full and complex expression of the variety.
The vines are farmed with respect for the environment, with sustainable management and particular attention paid to biodiversity. The soil, well drained while retaining moisture, ensures healthy, balanced vines that yield concentrated, ripe grapes.
The grapes are harvested by hand at perfect ripeness to preserve their integrity and quality. Once in the cellar, rigorous sorting and gentle pressing extract the must with respect for the fruit. Fermentation takes place in temperature-controlled stainless steel tanks to retain the freshness and primary aromas of the Viognier, without malolactic fermentation so as to keep its liveliness and fruitiness. Ageing on fine lees for several months brings a round texture and lovely complexity, while preserving the wine’s purity.
Visually, this Viognier has a bright golden colour adorned with luminous yellow tints. The nose shows great aromatic intensity, with aromas of yellow-fleshed fruit such as apricot, peach and pear, complemented by floral touches of violet and a subtle note of honey. On the palate the wine is full and generous, its richness balanced by lively freshness and perfectly integrated acidity. The finish is long and delicately mineral, with a touch of sweet almond.
