The Cévennes IGP – Tour de Gâtigne – Chardonnay white is a wine of great freshness that fully expresses the character and elegance of the Cévennes valley. It comes from a terroir where the Mediterranean climate meets mountain influences, offering a broad aromatic range and precision on the palate. Chardonnay, the emblematic white wine grape, is crafted here to retain all its liveliness and fruity expression.

The vines are grown on clay-limestone soils, which retain water well while allowing optimal drainage. This particular terroir lets the grapes ripen slowly, ensuring a healthy, balanced harvest. The vineyard is managed with respect for the environment, using a sustainable approach to limit the use of plant protection products.

The grapes are harvested by hand to keep the bunches intact. Once in the cellar, they are carefully sorted and then gently pressed. The must is fermented in temperature-controlled stainless steel tanks to preserve the primary aromas of the Chardonnay. There is no malolactic fermentation, so as to retain the wine’s freshness and natural acidity. Ageing on fine lees for a few months brings subtle complexity and gives the wine a round, silky texture.

On tasting, the wine shows a pale, luminous colour with golden highlights. The nose is very expressive, with aromas of white-fleshed fruit (apple, pear), complemented by notes of citrus and white flowers. The palate is lively and fresh, well balanced with lovely tension. The finish is long, marked by a slight mineral touch that prolongs the tasting experience.
