Description

This Bourgogne Aligoté, from vines around 35 years old grown on a 1.5-hectare plot, perfectly expresses the typicity of the variety in its most authentic form. Yields kept to 60 hl/ha preserve good aromatic concentration. Fermented in stainless-steel vats for 7 to 15 days, then aged in stainless steel for around 10 months, it retains great freshness and a pure expression of the fruit.

To the eye, the colour is a clear pale gold, reflecting its youth and liveliness. The nose opens on delicate floral aromas, with notes of citrus, lemon in particular, that evoke freshness. On the palate, the attack is clean; the wine builds a taut acid backbone, with a saline finish that heightens the sense of minerality. This tension on the palate, typical of well-made Aligoté, makes it ideal as an aperitif or alongside regional dishes such as gougères, Burgundy snails or jambon persillé.

This wine is best enjoyed at around 12 °C to reveal all its aromatic finesse and liveliness.
