Description
This Pinot Noir is the fruit of a carefully farmed terroir of 4 hectares of vines averaging 30 years of age. Yields are kept to 50 hl/ha, producing concentrated, high-quality grapes that reflect the full typicity of the variety. After hand harvesting, winemaking begins with around 15 days in vat, with 35% whole bunches, to bring out finesse and fruit. This traditional fermentation method releases the full aromatic complexity of the Pinot Noir.
The wine is aged in French oak barrels for 12 months, bringing a subtle touch of oak while preserving its elegance and freshness. This barrel maturation gives it a silky structure and lovely depth while maintaining fine liveliness.
On tasting, this wine shows a purple colour with violet hints. The nose is delicately fruity, with aromas of morello cherry and raspberry that unfold with finesse and complexity. On the palate, it offers a perfect balance between roundness and freshness, with elegant tannins and a lingering finish. This wine shows great finesse while remaining powerful and expressive, typical of Pinot Noir.
Served at 13°C, it is the ideal partner for refined dishes such as white meats, notably pork tenderloin or veal. This wine can also develop well in the cellar, gaining even more complexity over time.
Production: around 30,000 bottles.
