Description
This Pinot Noir comes from a 0.45-hectare plot where the vines, 40 years old on average, enjoy a terroir well suited to the fullest expression of the variety. Yields are deliberately kept to 45 hl/ha to ensure perfect aromatic concentration and exceptional grape quality. This approach produces a rare wine, with around 2,000 bottles made each year.
The wine is made using a traditional method that respects the fruit. The grapes are partially destemmed, with around 20% whole bunches to add complexity and structure to the wine. Maceration lasts around 15 days, during which gentle extractions preserve the freshness and purity of the fruit while achieving a fine tannic structure. After fermentation, the wine is aged in French oak barrels for 12 months, bringing subtle aromas and a silky texture while leaving room for the Pinot Noir’s own expression.
Visually, this wine stands out for its bright garnet colour, a testament to its youth and concentration. The nose is fresh and expressive, dominated by aromas of redcurrant and cherry, with touches of crunchy, lightly spicy red fruit. On the palate, the attack is lively, with lovely freshness, followed by a warm, enveloping finish. The tannins are elegant and well integrated, giving a fluid, pleasant texture.
This Pinot Noir, to be served at 14°C, pairs perfectly with roast or lacquered poultry, highlighting its freshness while creating a harmonious contrast with the rich, tender flavours of the bird. Its limited production of around 2,000 bottles makes it a rare and precious wine, ideal for Pinot Noir lovers looking for a fine expression of terroir, combining finesse and indulgence.
