Description
The Cocagne white from Domaine de Mirabeau, located in the Collines de la Moure south of Montpellier, is a Vin de France made from a mosaic of Mediterranean white grape varieties: Rolle (Vermentino), Bourboulenc, Terret and Piquepoul. This cuvée embodies the free and lively spirit of Languedoc natural wines, while respecting certified organic viticulture.
The vines are planted on a typically Mediterranean garrigue terroir of well-drained clay-limestone soils, enjoying a cool, breezy microclimate thanks to the nearby sea. This privileged setting allows a slow, balanced ripening of the grapes, encouraging aromatic finesse and natural freshness.
The harvest is done by hand, early in the morning, to preserve the brightness of the aromas. The grapes are then pressed directly, with light settling, then fermentation is carried out with indigenous yeasts in stainless steel tanks, at a controlled temperature to preserve the primary aromas. There is neither fining nor filtration, and added sulphites are minimal, or even nil depending on the cuvée.
On tasting, Cocagne white shows a pale, brilliant colour with slightly silvery highlights. The nose opens on delicate aromas of citrus zest, fresh pear, white flowers and wild fennel. The palate is straight and invigorating, with lovely saline tension, an ample yet elegant texture and a slightly briny finish reminiscent of the nearby sea.
