Description
The Les Hauts de Perry cuvée comes from a very limestone-rich, highly fractured Jurassic plot facing north / north-west.
This Syrah and Grenache vineyard reaches phenolic ripeness at 12/12.5% vol.
The aromatic profile is very close to northern Rhône Syrahs, with aromas of violet, rose petals, a hint of leather and plenty of freshness.
The Mourvèdre, which makes up around fifteen per cent of the blend, grows much lower down on the south-facing slope, well supplied with water by the whole fractured Jurassic limestone plateau.
The grapes are harvested by hand, destemmed and put into vats using a conveyor belt. Fermentation starts with indigenous yeasts. Maceration lasts 30 to 35 days with light pump-overs to extract as gently as possible. The wine is aged in terracotta jars and Flextank vats for about 2 years.
The wine is bottled without fining or filtration on a fruit day during a descending moon; the only sulphur added is added at that point, at 2 g per hectolitre.
