Description
This Saint-Véran from Domaine Duvert perfectly illustrates the potential of Chardonnay grown on the clay-limestone terroirs of southern Burgundy. Close to the Roche de Solutré, the vineyard enjoys a temperate climate and an ideal exposure, allowing slow, balanced ripening of the grapes. The estate farms its vines under certified organic agriculture, respecting natural balances and local biodiversity.
The grapes are harvested at optimum ripeness, then pressed gently to preserve the aromatic purity of the fruit. Alcoholic fermentation takes place with indigenous yeasts, in temperature-controlled stainless-steel tanks, to respect the identity of the vintage and the terroir. The wine is then aged on fine lees for about 8 months, which gives it roundness, complexity and fine depth of aroma, while keeping its liveliness.
In the glass, this Saint-Véran shows a light yellow colour with pale gold highlights. The nose opens on clean, elegant aromas of white flowers (acacia, hawthorn), white peach, citrus zest and a hint of chalky minerality, the signature of its terroir. On the palate the attack is clean, followed by an ample, harmonious development, with a fine tension that balances the natural richness of Chardonnay. The finish is long and saline, revealing subtle notes of dried fruit and fresh butter, suggesting good ageing potential over 2 to 4 years.
This wine is a perfect match for grilled fish, poultry in cream sauce, goat’s cheeses or refined vegetarian dishes.
Serve between 10 and 12°C, after a short time in a decanter to reveal its full complexity.
