Description
This Pinot Noir comes from a 1.4-hectare plot of vines averaging 35 years of age. Yields are kept to 40 hl/ha, favouring aromatic concentration and grape quality. This careful approach gives rise to a wine of limited production, around 6,000 bottles a year, ideal for Pinot Noir lovers looking for a refined and powerful wine.
The winemaking respects tradition. After rigorous sorting, the grapes spend around 15 days in vat, including 20% whole bunches to add complexity and structure to the wine. Fermentation takes place at a controlled temperature to preserve the freshness and intensity of the aromas. The wine is then aged in French oak barrels for 12 months, an ageing that brings subtle aromas of oak and vanilla while leaving room for the pure expression of the terroir and the variety.
The result is a Pinot Noir with a deep red, ruby colour of great brilliance. The nose is complex, marked by aromas of black fruit such as blackberry, blueberry and redcurrant, intertwined with spicy and lightly oaky touches. On the palate, the attack is powerful, with well-structured tannins and a fine balance between freshness and strength. The texture is at once velvety and tannic, giving a sense of density and length.
Served at 14 °C, this Pinot Noir pairs perfectly with rich, flavourful dishes such as furred and feathered game, whether braised or roasted. It will also go well with mature cheeses. Thanks to its ageing potential, it is a wine that will develop well in bottle over the years, revealing new nuances with time.
This rare wine, with production limited to around 6,000 bottles, embodies the elegance and power of Pinot Noir, true to its terroir. A perfect choice for connoisseurs seeking wines of character and quality.
