Description
The grapes come from an old plot of Carignan next to the estate, planted in the 1950s.
The harvest is carried out in crates and the grapes are generally put into the vat as whole bunches. In years when the stems are not fully ripe, the whole bottom of the vat is scraped so as not to extract any green character from the stems, which would otherwise seep into the juice.
Interventions during winemaking are minimal, or even non-existent in some years.
The wine is aged in 20 hl egg-shaped concrete vats for 7 to 8 months. It is bottled without fining or filtration on a fruit day during a waning moon. Total sulphites are below 10mg/litre.
