Cocagne red from Domaine de Mirabeau is a Vin de France from the terroir of the Collines de la Moure, in the hills of the Languedoc, between the Mediterranean Sea and the garrigue. This wine takes a free, sincere and minimalist approach, true to the spirit of natural wines and the artisanal work of this family estate committed to organic farming.
Grape varieties and terroir
It is made solely from Cinsault. The vines are planted on well-drained limestone and clay-sand soils, rich in microbial life, and enjoy a Mediterranean climate, tempered by sea breezes from the nearby Mediterranean.
Viticulture
The vineyard is farmed entirely organically, with no synthetic products. The soils are worked gently, with controlled grass cover, and the harvest is done by hand, with careful sorting in the plot. Yields are limited, allowing good aromatic concentration.
Winemaking
The winemaking is natural: indigenous yeasts, no oenological additives, no fining or filtration.
The Carignan is often vinified by carbonic maceration or semi-carbonic maceration to preserve its crunch and freshness. The other varieties ferment in concrete or stainless steel vats, with gentle extraction (light punching down or pumping over).
Malolactic fermentation takes place spontaneously. Ageing lasts a few months, in vats, to preserve the brightness of the fruit.
Tasting
-
Colour : bright ruby red, purple tints.
-
Nose : intense and pure, with fresh red fruit (raspberry, redcurrant), the cherry, a hint of white pepper, of garrigue (thyme, bay leaf) and a slightly fermentative typical of natural wines.
-
Palate : supple attack, light, juicy body, fine tannins, a lively, almost saline finish. No heaviness, but lovely energy and great drinkability.
Food & wine pairing
Enjoy lightly chilled (14–15 °C) with a board of fine charcuterie, a herb-grilled chicken, a ratatouille or even a Neapolitan pizza. A wine for friends and relaxed evenings, which puts the authenticity of the fruit and the terroir first.
Alcohol content
Between 12% and 12.5% ABV depending on the vintage.
Ageing potential
Best drunk within 2 to 3 years to enjoy its aromatic brightness and liveliness.
A living wine, without artifice, that expresses the raw beauty of the Languedoc through careful artisanal work that respects nature. Supple, fruity and sincere: a true wine of pleasure.
