Description
The Cévennes IGP – Tour de Gâtigne – Viognier white is an exceptional wine that embodies all the richness and singularity of the terroirs of the Cévennes valley. This wine is made from the Viognier grape, known for its ability to produce white wines that are both aromatic and elegant. The region’s clay-limestone terroir, combined with a Mediterranean climate tempered by mountain influences, creates ideal conditions for growing this delicate grape, allowing the grapes to ripen slowly and optimally.
The vines are grown with respect for the environment, using sustainable vineyard management and paying particular attention to preserving biodiversity. The soil, well drained yet with a good water-holding capacity, encourages healthy, balanced vines with ripe, concentrated grapes.
The grapes are harvested by hand at perfect ripeness, to preserve the integrity of the berries and guarantee optimal quality. Once in the cellar, the grapes are rigorously sorted and gently pressed to extract the must. Fermentation takes place in temperature-controlled stainless steel tanks, to preserve the freshness and primary aromas of the Viognier. This wine has not undergone malolactic fermentation, thus retaining its liveliness and fruity profile. Ageing on fine lees for several months gives the wine a round texture and lovely complexity while preserving its purity.
Visually, the Cévennes IGP – Tour de Gâtigne – Viognier white has a bright, golden colour with light yellow glints. The nose is intensely aromatic, dominated by aromas of yellow-fleshed fruit, notably apricot, peach and pear, along with floral notes of violet and a subtle touch of honey. On the palate, the wine is broad and generous, offering lovely richness, yet always balanced by lively freshness and well-integrated acidity. The finish is long, marked by a delicate mineral note and a slight touch of almond.
