Hopped bissap infusion – Floral, fruity, no bitterness
Alcohol-free | Low in calories | Unfermented
Hops used: Barbe Rouge & Aramis
pH: ~3.2 | Final gravity: 1.000 | Calories: ~12 kcal / 100 ml
Crafted in a microbrewery as an experimental, unfermented brew, this infusion brings together the organoleptic properties of hibiscus sabdariffa and French aroma hops, without extracting any bitterness.
The Barbe Rouge hop, rich in myrcene and fruity esters, brings clean aromas of red fruit (strawberry, redcurrant, cherry), reinforced by Aramis, more floral, which adds a fresh, lightly spicy green dimension. Dry hopping, carried out at low temperature (< 20°C), preserves the essential oils while avoiding the extraction of alpha acids.
The hibiscus, infused hot but at a controlled boil, gives a lively acidity (pH ~3.2), an intense ruby colour, and a dry tannic touch that structures the palate. The result is an ultra-clear drink, very low in calories, with no residual sugar (FG = 1.000), no alcohol and no fermentation.
Serve between 6 and 8°C, as a sophisticated alternative to soft drinks, alcohol-free beers or kombuchas. Excellent paired with spicy dishes (African or Indian cuisine), red-fruit desserts, or as a mocktail base.
