Description
The Ardèche IGP – Tentation Blanc from Jean-François Jacouton is a subtle, refined white wine, a blend of 75% Marsanne and 25% Chasselas, grown on the sunny hillsides of the Ardèche. The vines, 25 to 30 years old, benefit from sustainable viticulture that respects the environment, with controlled yields to guarantee the quality of the grapes. The harvest is entirely by hand and takes place when the bunches reach optimum ripeness, in order to preserve the wine’s freshness and balance.
After harvest, the grapes are gently pressed and fermented in temperature-controlled stainless steel tanks, allowing precise temperature control and maximum preservation of the fresh, fruity aromas. The wine is then aged for 10 months in tank, with light stirring on the fine lees, a technique that gives it a silky texture and subtle complexity while retaining its original freshness.
On tasting, the Tentation Blanc shows a crystal-clear, luminous colour. The nose is delicate and expressive, marked by aromas of lemon, honeysuckle and fresh herbs, offering a fine and pleasant aromatic palette. On the palate, the wine stands out for its pleasant freshness and a slightly creamy texture that gives it a sense of roundness. The finish is long and mineral, with notes of white-fleshed fruit and white flowers.
This wine is ideal served as an aperitif, or alongside shellfish, river fish such as trout, or firm cheeses such as Saint-Nectaire or Comté. It can be enjoyed young, but also has an ageing potential of 2 to 3 years to develop its aromas further.
