Description
This white wine comes from the Collines de la Moure, a terroir in the Hérault known for its limestone and sandy clay soils and its maritime influence. The nearby Mediterranean, combined with good sun exposure and cool nights, gives the Rolle a balanced ripening cycle that encourages aromatic expression and freshness.
Viticulture
Domaine de Mirabeau is committed to organic and social farming: the vines are grown without synthetic inputs, with mechanical soil work and particular attention paid to biodiversity. The project is also a social integration scheme, training people far from employment in vineyard trades.
Winemaking
-
Hand harvesting, in small crates, very early in the morning to preserve freshness.
-
Direct pressing gentle, to extract a clear, expressive juice.
-
Cold settling then fermentation in stainless steel tanks at a controlled temperature (15-17 °C), to preserve the primary aromas of the Rolle.
-
Ageing on fine lees for several months with occasional lees stirring, which brings volume and complexity to the wine without dulling its liveliness.
Tasting
-
Colour : brilliant pale yellow with green highlights.
-
Nose : expressive and subtle, with notes of white flowers, citrus (lemon zest, grapefruit) and a hint of brininess.
-
Palate : lively attack, supple texture, lovely mineral tension. The finish is clean, slightly saline, very thirst-quenching.
