Description
Saint-Romain en Chevrot 2023 is an exceptional cuvée from the Emmanuel Giboulot estate, born of a clay-limestone terroir at high altitude on the slopes of Saint-Romain, in the Côte de Beaune. Facing east-south-east, this terroir enjoys a cooler climate, allowing excellent retention of acidity and slow ripening of Pinot Noir, the variety that makes up this wine.
The vines, farmed biodynamically according to the principles of nature and with respect for lunar cycles, produce high-quality grapes, in which the biodiversity of the soil and the respectful management of the plant are reflected in the very expression of the wine. No chemical inputs are used in the vineyard, and all treatments are carried out with natural preparations to preserve the balance of the vine.
The harvest, picked by hand and carefully sorted, is vinified naturally. After full destemming, the grapes ferment with indigenous yeasts in open wooden vats, allowing a gentle extraction of aromas and tannins. Fermentation takes place at a controlled temperature to preserve freshness and the pure expression of the fruit. The wine is aged for 12 months in used oak barrels, to avoid too marked an oak influence while adding extra complexity to the wine.
Saint-Romain en Chevrot 2023 shows a delicate nose of fresh red fruit, mainly cherry and raspberry, enriched by subtle notes of forest floor, damp earth and light touches of spice, typical of the finesse of Pinot Noir. On the palate, the wine is silky and well structured, with fine tannins that blend perfectly into a light, airy texture. The acidity, lively yet elegant, gives the wine lovely freshness and great precision on the finish. The length is pleasant, marked by a mineral lightness that is the signature of this unique Saint-Romain terroir.
This Saint-Romain en Chevrot 2023 is an ideal wine for cellaring for 5 to 8 years, but it can be enjoyed now with light meats such as chicken fillet, game or soft cheeses. It will be particularly enjoyable with flavourful yet delicate dishes that showcase its finesse and elegance.
