Description
Colour: Pale yellow, slight green tint
Nose: Delicate, fresh: white flowers, chalk, fennel, chervil, freshly cut hay, then pear, Granny Smith apple, apricot and passion fruit, salty sea spray, a touch of citrus somewhere between lime and grapefruit peel
Palate: Juicy, full of crisp white fruit haloed with a fine touch of honey, enlivened by lovely mineral tension with saline and peppery accents. An exciting grip on the mid-palate, with fine maritime bitter notes. Finish on powdery notes of chalk
Food and wine pairings: A seafood platter with pride of place given to shellfish, but also sea bream with ginger or paprika king prawns. An Ossau Iraty with morello cherry jam.
