Description
From one of the most emblematic terroirs of the Côte de Beaune, the Pommard red from Domaine Chapelle is a classic, masterful expression of Pinot Noir on clay-limestone soil, at the crossroads of power and elegance. The wine owes its singularity to plots at the foot of the Pommard slopes, where the combination of rich soils and old vines allows optimal ripeness of the grapes and fine aromatic concentration.
The estate, committed to certified organic farming, applies rigorous winegrowing practices that respect living things. The care given to the vineyard, notably through mechanical soil cultivation, nurtured biodiversity and reduced yields, ensures healthy, expressive fruit. The grapes are harvested by hand, with meticulous sorting in the vineyard and in the winery.
Winemaking follows traditional Burgundian methods: partial destemming, spontaneous fermentation with indigenous yeasts, and maceration for 15 to 20 days with gentle punching down and pumping over, all in temperature-controlled stainless steel tanks. The wine is aged for 12 to 15 months in French oak barrels, around 25% of them new, to bring complexity and structure while respecting the expression of the fruit.
On tasting, this Pommard shows a deep ruby colour with garnet highlights. The nose is intense, dominated by aromas of ripe black fruit (blackcurrant, blackberry) and candied morello cherry, complemented by notes of forest floor, liquorice, and a subtle ferruginous minerality specific to the terroir. On the palate, the attack is clean, with an assertive tannic structure, but tannins that soften with aeration and age. The whole is balanced by fresh acidity, ensuring fine aromatic persistence and remarkable ageing potential.
This Pommard from Domaine Chapelle is a wine of character, ideal with rich, structured dishes: game in sauce, roast meats, bœuf bourguignon, or mature cheeses such as aged Comté or Livarot. It can be enjoyed in its first few years after some aeration, but it will reach its full expression after 5 to 10 years of ageing.
