Description
This Pinot Noir comes from a small 0.5-hectare plot planted with vines around 40 years old, on a terroir well suited to a pure, delicate expression of the variety. Yields are deliberately kept to 40 hl/ha to concentrate the fruit and guarantee high-quality grapes. This precision viticulture produces berries at full ripeness, rich in aromas and naturally balanced.
The winemaking follows a philosophy of respect for the fruit and technical minimalism. The grapes are fully destemmed to preserve the finesse of the Pinot Noir, without excessive extraction of tannins. Fermentation takes place directly in terracotta amphorae, a neutral material that allows gentle micro-oxygenation while retaining the purity of the fruit. Maceration lasts around 15 days, with gentle extraction by infusion and no aggressive pumping over.
Ageing continues in these same amphorae for 12 months. This original method of ageing gives the wine a silky texture, with no oak influence, and highlights its freshness and aromatic precision. The absence of added sulphites during winemaking (if applicable depending on the estate) further accentuates this natural approach, focused on the most sincere expression of the grape and the vintage.
On tasting, this Pinot Noir shows a vivid, bright, limpid ruby colour. The nose is pure, expressive and delicate, with intense aromas of fresh fruit such as wild strawberry and white peach, and subtle floral notes. On the palate, the wine is fluid, crunchy and vibrant, with clean fruit and lovely energy. The finish is fresh, light and lingering.
Served at 13 °C, this original, lively wine can be enjoyed in a relaxed way as an aperitif, or with a fine grilled rib of beef, for an indulgent pairing between the finesse of the fruit and the power of the meat. With only 2,000 bottles produced, this amphora-aged Pinot Noir embodies an artisanal, contemporary vision of wine, combining precision, naturalness and immediate pleasure.
