Description
Grignan-les-Adhémar AOP – Domaine Bonetto Fabrol – Héritage is an elegant, structured wine that perfectly reflects the unique terroir of the appellation and the expertise of the estate. This red comes from vines planted on clay-limestone plots and benefits from an ideal exposure that allows the grapes to ripen optimally. Grown using environmentally friendly methods, the vines are managed under sustainable viticulture, without pesticides or herbicides, to guarantee a pure, authentic wine.
The 2023 vintage is based on a subtle blend of Syrah, Grenache and Mourvèdre, emblematic grape varieties of the southern Rhône Valley. These grapes are picked by hand at full ripeness, which allows all the aromatic richness of the fruit to be extracted. The hand harvest is followed by rigorous sorting before the grapes go into the vat. Once in stainless steel vats, the grapes undergo a pre-fermentation maceration of 5 to 7 days to encourage the extraction of aromas and colour. Fermentation then takes place at a controlled temperature, to preserve the freshness of the fruit and ensure a clean vinification.
After fermentation, the wine is aged in stainless steel vats for several months, allowing it to retain all its purity and finesse. It does not spend any time in barrel, thus preserving the lightness and freshness of this wine. It has not undergone malolactic fermentation, which contributes to its liveliness and its pleasant structure. This wine is therefore pure, direct and well balanced, with fine tannins and expressive aromas.
Visually, the wine shows a deep red colour with purple glints. The nose is complex and intense, revealing aromas of ripe red fruit (cherry, raspberry), spicy notes (liquorice, black pepper), and subtle floral and mineral touches that reflect the typicity of the terroir. The nose is refined, with lovely freshness and great expressiveness.
On the palate, the attack is clean and supple, followed by a more structured development with fine, well-integrated tannins. The body is dense, yet the wine remains balanced, bringing a lovely roundness to the palate. The finish is long and pleasant, marked by a light spicy touch and a freshness that prolongs the pleasure.
Food & wine pairings: This wine goes wonderfully with grilled meats, dishes in sauce, braised meats, or mature cheeses such as Comté or Saint-Nectaire. It also accompanies Mediterranean dishes such as ratatouille or tagines.
