Description
This Pinot Noir comes from a 0.55-hectare plot where the 20-year-old vines are carefully tended to produce an exceptional wine. Yields are kept to 45 hl/ha, achieving optimal aromatic concentration while guaranteeing grape quality. This cuvée is produced in very limited quantities, around 1,500 bottles, making it a rare and sought-after wine.
Winemaking begins with a meticulous sorting of the grapes, followed by a maceration of around 15 days in stainless-steel vats, with 20% whole bunches. This method draws out more complex aromas and gives the wine a rounder texture. During fermentation, the temperature is controlled to preserve the freshness of the fruit and the purity of the variety. After fermentation, the wine is transferred to French oak barrels, where it is aged for 12 months. Barrel ageing brings subtle oaky aromas while allowing the tannins to soften and the wine to develop its richness.
Visually, this Pinot Noir shows an intense, luminous carmine red colour, a sign of its youth and concentration. On the nose, it opens on fresh strawberry aromas, accompanied by spicy notes of liquorice, creating a complex and enticing bouquet. On the palate, the attack is full, followed by a powerful, rich structure. The texture is full-bodied, with firm but well-integrated tannins, giving a sense of elegance and depth.
This wine, to be served at 14°C, pairs perfectly with furred or feathered game, braised or roasted, as well as with mature cheeses such as Ami du Chambertin. Its richness and power allow it to match harmoniously with flavourful dishes full of character. This Pinot Noir, with its ageing potential, will also improve over the years, revealing new nuances and growing complexity.
A rare wine from a carefully worked terroir, ideal for lovers of authentic, powerful Pinot Noir looking for a wine of great quality.
