Description
The 2022 vintage of the cuvée Combe d’Ève embodies the natural elegance and mineral tension of Burgundy’s great high-altitude whites. Located on the heights above Beaune, more than 350 metres above sea level, the plot enjoys a clay-limestone soil with a high proportion of marl and a cool microclimate, ideal for preserving the acidity and finesse of the Chardonnay.
Farmed biodynamically for many years, Emmanuel Giboulot’s vineyard is worked with strict respect for natural balances: no herbicides, light ploughing, home-made compost, herbal infusions and biodynamic preparations support the life of the soil and the vine. The 2022 harvest, picked by hand, yielded perfectly ripe grapes while retaining lovely freshness.
The minimalist winemaking relies on spontaneous fermentations with indigenous yeasts. Pressing is slow and gentle, followed by natural settling. Ageing lasts around 12 months in used oak barrels, without lees stirring or excessive sulphur, to preserve the wine’s aromatic integrity and the purity of its expression.
On the nose, Combe d’Ève 2022 reveals a delicate floral palette (hawthorn, linden), mingled with notes of ripe lemon, green apple and a touch of flint. On the palate, the attack is straight and energetic, driven by perfectly integrated acidic tension. The slender body is balanced by a fine salinity on the finish, typical of this limestone hillside terroir.
This white wine stands out for its precision, its verticality and its ageing potential. It is an ideal match for grilled fish, briny seafood or mature hard cheeses.
