Description
From a carefully selected climat on the slopes of Mâcon, “Aux Scellés” 2023 embodies Chardonnay as seen by Marcel Couturier: demanding viticulture, a respected terroir, and winemaking that lets the authenticity of the grape shine through.
The vines, over 30 years old, are planted on well-drained clay-limestone soils, oriented to catch plenty of light while retaining a freshness that benefits aromatic ripeness. The estate is run according to a sustainable philosophy close to organic, with natural grass cover, light ploughing, and strict respect for the vine’s biological balance.
The grapes, harvested at full ripeness, are whole-bunch pressed to preserve the purity of the fruit. The must is then cold-settled before being put into oak barrels (that have held 1 to 3 previous wines) for slow alcoholic fermentation with indigenous yeasts. Ageing on fine lees lasts 10 to 12 months, with moderate lees stirring, enhancing the wine’s aromatic complexity and texture without heaviness.
On tasting, the colour is pale yellow with golden highlights. The nose opens with clean aromas of pear, white peach, acacia blossom and a subtle touch of honey and wet stone. The palate is broad yet taut, carried by lovely limestone minerality, with a saline, lingering finish that bears the signature of its terroir.
This Mâcon white, both charming and precise, is equally at home as an aperitif or with seafood, grilled fish or poultry in cream sauce. Serve at around 11–12 °C; it has an ageing potential of 5 to 7 years.
