Description
This Chardonnay comes from an exceptional vineyard covering just 0.10 ha, with vines averaging 30 years of age. Yields are kept to 50 hl/ha, ensuring grapes of optimal quality and maximum aromatic concentration. After hand harvesting, the grapes are gently pressed using a long programme, allowing a delicate extraction of the juice and preserving the purity of the aromas.
The wine is made according to traditional methods, followed by ageing in oak barrels, then in amphora-shaped oak barrels for 12 months. This particular type of ageing, in amphorae, preserves great freshness while giving the wine unique complexity and texture. This process gives the Chardonnay remarkable minerality and delicate roundness, while maintaining a fine expression of the terroir.
Visually, this wine shows a luminous golden colour, a testament to its oak ageing. The nose is a true invitation to discovery, with intense aromas of exotic fruit blending harmoniously with subtle oaky nuances. On the palate, the minerality stands out immediately, bringing a touch of freshness that balances the wine’s roundness. The structure is silky, and the finish long and elegant.
This Chardonnay is a refined wine, both complex and approachable, best enjoyed at 12°C. It pairs perfectly with fine fish such as cod, but also with jambon persillé or as an aperitif, for a unique tasting experience.
Production is very limited, with around 600 bottles made, making it a rare and precious wine to be enjoyed in all its splendour.
