Description

The Les Pierres Blanches 2021/22 cuvée is a magnificent expression of Pinot Noir grown biodynamically on a clay-limestone terroir in the Côte de Beaune, which gives the wine great finesse and fine minerality. The name of the cuvée refers to the soils rich in limestone stones that characterise this plot, giving the wine its unique signature.

The vines, 30 to 40 years old on average, are farmed according to biodynamic principles, with deep respect for natural cycles. No chemicals are used, and the vineyard is managed with gentle methods: plant-based treatments, natural composting and biodynamic preparations. The harvest, carried out by hand at perfect ripeness, guarantees grapes of optimal quality.

In the cellar, Emmanuel Giboulot practises minimalist winemaking: the bunches are destemmed and fermented with indigenous yeasts, with no added sulphur. Maceration is gentle and prolonged, allowing a delicate extraction of aromas and tannins. Ageing for 12 months takes place in used oak barrels, to preserve the purity of the fruit and the expression of the terroir without marking the wine with too much new oak.

The result is an elegant, structured and balanced red wine. The nose opens with aromas of fresh red fruit such as cherry and raspberry, with floral and spicy nuances (violet, white pepper). On the palate, the attack is supple, with lovely freshness and a silky texture. The tannins are fine and well integrated, supported by precise acidity that gives the wine great liveliness and good length. The slightly mineral finish bears witness to the typicity of this terroir.

The Côte de Beaune – Les Pierres Blanches 2021/22 lends itself to moderate ageing of 5 to 8 years, but it can already be enjoyed today, notably with dishes such as grilled red meats, feathered game or soft cheeses
