Description
A seasonal beer made from a blend of barley malts and unmalted wheat, this winter ale follows in the tradition of Belgian Witbier-style beers, enriched with a warming, complex aromatic profile.
Visually, it has a cloudy blonde colour, due to the absence of filtration and the presence of proteins from the wheat. The head is fine and persistent.
The nose opens with aromas of citrus (sweet orange, mandarin zest) and spices, dominated by coriander and ginger, added at the end of the boil to preserve the volatile essential oils. The top-fermenting yeast also contributes to the aromatic complexity with fruity (pear, banana) and phenolic esters.
On the palate, the attack is supple and slightly sweet, carried by a round malty base. The moderate effervescence and dry finish bring balance and drinkability, with a slight lingering honeyed note on the retronasal finish. The bitterness is low (10–15 IBU), leaving room for the expression of the spices and well-integrated residual sugars.
Ideal for food pairing with roast poultry, sweet-and-savoury dishes, mature cheeses or desserts made with candied fruit.
