Grape varieties: 50% Grenache Blanc, 40% Grenache Gris, 10% Macabeu

Yield: 30 to 35 hl/ha

Local terroir in Roussillon: Clay-schist and clay-limestone soils (Tautavel, Maury, St Paul de Fenouillet)

Harvest: By hand

Winemaking: Direct whole-bunch pressing, then fermentation at a controlled temperature of 18°C
